Along with the tree and the presents, Christmas calls for a festive meal – and the right wine to go with it. Sarah Falch, the sommelier at Ischgl’s gourmet restaurant, Stüva, has selected five wines for the holiday season for Trisanna.
CHARDONNAY TIGLAT 2013
Vineyard Heinz Velich, Apleton, Neusiedlersee
A proper festive season wine, it is delicate with a mineral complexity, tropical fruit flavours and scents of dried herbs. A complex bouquet, elegant, dense, burgundy texture, silky body, and an enduring, sweet aftertaste.
A perfect accompaniment to tagliolini with truffles.
SAUVIGNON BLANC ZIEREGG 2015
Vineyard Tement, Berghausen, Südsteiermark
Aroma of pears, mature gooseberries and a hint of mint, combined with very spicy aromatic overtones. An impressively complex wine on the palate.
A particularly good fit to roast salmon with creamy savoy cabbage and herb cream sauce.
BLAUFRÄNKISCH LEITHABERG DAC 2013
Christian Rainprecht, Oggau
The aroma recalls noble wood with undertones of dark berry confit, as well as scents of delicate nougat and cherry. On the palate it reveals red berry fruits, tannin elements and a mineral aftertaste.
Best enjoyed with pink roasted entrecote, roast potatoes and red wine sauce
Alois Lageder, Bozen, Südtirol
Fruity aroma typical for the variety, with a slightly spicy taste. Young, fresh, fruity and harmonious taste. Medium body with appreciable tannins in the aftertaste. When properly stored, this wine will offer optimal drinking pleasure over four to six years.
Perfect with roast saddle of venison and cranberry sauce, red cabbage and celery puree.
TRAMINER TBA NO. 2
Alois Kracher, Illmitz, Neusiedlersee
This sweet wine has fine echoes of rose and vanilla, although its bouquet is slightly enclosed, smelling of damp wool. The Traminer character is just hinted at in the scent, with exotic grapefruit zest revealed on the palate. The residual sweetness is beautifully interwoven, with a playful effect, demonstrating a fine acid structure which brings great vibrancy to the wine. A very clear finish which showcases the wood well. Its alcoholic fieriness can also be felt in the aftertaste.
